PALEO EGG MUFFINS

INGREDIENTS

12 EGGS

1 GREEN ONION

2 ZUCCHINI (MEDIUM)

8 SLICES OF BACON

1/2 CUP RED BELL PEPPER FINELY CHOPPED

1/2 CUP GREEN BELL PEPPER FINELY CHOPPED

4 CUPS FRESH SPINACH

SALT AND PEPPER TO TASTE


HEAT OVEN TO 375. GREASE MINI MUFFIN PAN. ADD INGREDIENTS INTO A BLENDER OR NINJA. ADD DRY INGREDIENTS FIRST AND CHOP FINELY. ADD EGGS INTO MIXTURE NEAR THE END OF PROCESSING AND MIX WELL.

FILL MUFFIN CUPS TO 1/2 FULL. THEY WILL RISE A LITTLE IN THE COOKING PROCESS.

BAKE FOR 20-25 MINUTES DEPENDING ON YOUR OVEN. MAKES 20-24 MUFFINS.

I RECOMMEND DOUBLING THIS RECIPE AND FREEZING OR REFRIGERATING EXTRAS. THESE ARE A GOTO IN OUR HOME.

TOTAL PREP/COOK TIME IS 35-40 MINUTES.
